HEAD BAKER
Qualifications:
1. Minimum education: Diploma (D3) in Culinary Arts, Pastry, Baking, or any related field
2. At least 8 years of experience in bakery production, with a minimum of 2 years in a leadership or senior position
3. Skilled in both basic and advanced baking techniques, especially in making bread, croissants, sourdough, and other bakery products
4. Able to operate and maintain modern and traditional bakery equipment
5. Good understanding of HACCP and Good Manufacturing Practices (GMP) for food production
6. Experienced in developing new recipes and improving existing ones
7. Creative, innovative, and passionate about crafting high-quality bakery products
8. Able to meet production targets and deadlines
Responsibilities:
1. Lead, organize, and monitor the day-to-day bakery operations to ensure production runs smoothly and targets are met
2. Oversee the use of ingredients to make sure recipes are followed and product quality stays consistent
3. Help plan the menu and manage ingredient inventory to support daily production
4. Ensure efficient workflow in the kitchen, reduce food waste, and help control production costs (COGS)
5. Maintain cleanliness and food safety standards in line with industry regulations
6. Train and guide the bakery team to work efficiently and maintain high standards
7. Continuously evaluate and improve baking processes and product quality
